3 Healthy Halloween Recipes [+1 Bonus Dessert]

by Albert Lee Appliance

When you think of Halloween, what are a few things that come to your mind? Dressing up for extravagant costume parties, adorable trick or treaters knocking on front doors well past their bedtime, and eating so many unhealthy treats and candies that your stomach aches for the next three days are just a few of the many memories you may have about the spooky holiday.

But because we are in the midst of a pandemic that requires us to socially distance ourselves from people, Halloween is bound to look a bit different this year. Try something new this year and instead of stuffing your face with all the store-bought chocolates and all the sugar-filled goodies you can get your hands on, why not make some healthy Halloween snacks? If you’ve been wondering how to stay healthy during Halloween, we’ve brought together some sweet and savory dishes that won’t make you feel so guilty by the end of the night.

1. “Devil”-ed Eggs

If you’re looking for a conversation starter, these deviled eggs with olive spiders nestled on top are just the healthy Halloween snacks to do the trick. Not only will these spooky treats spark a convo with family and friends, but they’ll also only take you about 30 minutes to make.

With the help of this GE Cafe induction cooktop, you’ll have precise control over the heat and will be able to boil your eggs quickly with just the touch of a button.

All you have left to do is to peel the egg, cut it in half, remove the yolk and then combine it with other ingredients in a bowl before putting back in the center of the egg half. And if you have children, have them help you place the spider olive cuttings on your deviled eggs. This is the perfect kid friendly healthy Halloween recipe to create together!

2. Pumpkin Mashed Potatoes

‘Tis the season for pumpkin-everything, so we obviously couldn’t make a list without adding a recipe that included the orange staple in it. Although pumpkin is a common flavor during the autumn months, it's not normally combined with mashed potatoes. But, surprisingly, the two flavors of this pumpkin mashed potatoes recipe go together exceptionally well!

You’ll want to start by cooking your potatoes for about 20 to 25 minutes over the stove in a large saucepan. Once they’re tender enough, drain and mash them either with an electric mixer or potato masher before adding the canned pumpkin and other seasonings to the mix. You’ll be saying “life is gourd” as soon as you take a bite.

3. Halloween Stuffed Pepper Jack-O'-Lanterns

Get ready to play with your food and eat it, too! These Halloween Stuffed Pepper Jack-O'-Lanterns taste just as great as they look and are another great kid-friendly Halloween recipe to make for your little one. The directions for this recipe require you to use a knife to carve out the jack-o'-lantern face, so we suggest you take care of that part alone and let your child join in on the activity afterwards -- just to be as safe as possible.

Heat your oven to 350 degrees and let the bell peppers cook in a pan for 20 to 25 minutes before taking out and filling with the rest of the ingredients. From carving out your sweet orange bell peppers to look like miniature jack-o'-lanterns to filling them to the brim with a rice and ground beef concoction, this meal will be enjoyable to make and even better to eat!

4. Ghost Vanilla Donuts

Okay, we know what you’re thinking – vanilla donuts don’t sound like food that will keep you in good shape. But, as far as desserts go, these spooky treats are made with healthy ingredients so you won’t feel guilty chowing down on a few of them after dinner! Whole wheat flour, Himalayan salt, coconut oil, Greek yogurt, and egg whites are just a few of the wholesome ingredients you’ll find in this recipe.

You can begin by preheating the oven to 350 degrees. Mix your dry ingredients and wet ingredients into separate bowls and then once those are stirred well, pour the dry into the wet. We recommend filling a donut pan with your mixture for the least messy outcome. When they are done cooking after 14 to 17 minutes, take the donuts out and add eyes to your healthy Halloween treat by using small chunks of dark chocolate.
